VINIFICATION Pressed in a pneumatic press
Cold clarification of grape juice, then temperature controlled fermentation at 20° C for several weeks using only indegenous yeasts
Vinification and maturation sur lie in underground vats lined with glass tiles
These vats stays on its lees (sur lie) for seven months until it is bottled
MATURATION Bottled in May 2017
TESTING / SERVING Serve at 10/12°
As an aperitif, with shellfish, ocean and river fish, fresh cheese (soft goast’ cheese)
PACKAGING Burgundy bottle
75cl and 37.5cl bottles in 6 or 12 bottle cases
