|VINIFICATION||Pneumatic pressing , cold settling of juices which are then transferred by gravity to small underground vats paved with glass tiles. Maturation in Taransaud barrels. Alcoholic fermentation achieved by indigenous yeasts chosen on the plot.|
|MATURATION||22 months on lees. No racking before bottling in july 2018|
